How this score is calculated

It is built from checkable properties of the record itself: whether the article has a DOI, how many independent sources confirmed its data, whether the required fields are filled in, and how recent the latest confirmation is. Disagreement between sources and a missing identifier lower it. A value of 80 or above means the record was published without further checking; 60 to 79 means it is published at reduced confidence, with a manual check advisable. A record verified by an editor by hand is never pushed below 90 by a recalculation. This scores our data about the article, not the article itself.

Abstract

This study examines the role of lactic acid bacteria (LAB) in sourdough fermentation and their impact on the microbiological safety and quality of bread. LAB are known for inhibiting spoilage microorganisms and pathogenic microbes by producing antimicrobial compounds such as organic acids and bacteriocins. Many researchers highlight the numerous advantages of using LAB including improved nutritional value, enhanced sensory properties, and extended shelf life of baked goods. Optimization of fermentation processes involving LAB not only increases the bioavailability of essential minerals but also contributes to reducing anti-nutritional factors, such as phytic acid. The results of multiple studies suggest that the incorporation of LAB into sourdough preparation processes can serve as a natural alternative to chemical preservatives, aligning with consumer demand for healthier food products. This study reviews the main types of sourdough and the compounds responsible for preventing microbiological contamination and spoilage of bread.
