The introduction and the emergence of the Internet of Things (IoT), Internet of Vehicles (IoV), and 5G networks present unparalleled challenges for securing data and connecting IoT devices more securely. Cryptography, in its two main forms, classical and modern, is a very useful tool for securing information communication. The Asymmetric encryption algorithm is widely used to ensure confidentiality and authentication in the 5G and Zero Trust parameters, and secure data transmission which involves a pair of keys; a public key and a private key. However, realizing the principles of the dynamic Zero-Trust Architecture (ZTA) requires moving beyond static cryptographic authentication. This survey highlights the critical role of Bayesian Networks (BNs) as a complementary intelligent security layer that enables dynamic trust evaluation and probabilistic risk assessment, which are essential for continuous authentication and mitigating emerging threats in uncertain environments. Securing the transmission and authentication of trust parameters in the context of 5 G networks is crucial to maintaining the integrity and privacy of communications. Cryptosystems and probabilistic models play a fundamental role in achieving these goals. This paper is a comprehensive survey that studies the application of cryptography in blockchain, Zero-Trust, and authentication, alongside the integration of Bayesian Networks for dynamic security modeling, in both IoT and 5 G and beyond networks in the literature and shows the trends of cryptography in other networks as; Nanonetworks, 5G-6G Enabled IoT, IoV, WSN, MANET and VANET.
