Corn cobs of yellow maize are a good source of carotenoids -natural antioxidants with health properties. They are stored in high amounts even after processing and constitute a large by-product of corn industries and a promising source of carotenoid to extract. The study developed an effective method for carotenoid recovery from corn cob powder and further investigated the role of preliminary alkaline saponification.Physico-chemical properties were investigated including bulk density, moisture content, water holding, swelling and oil-holding.The highest total carotenoid extraction was achieved using dried corn cob powder of the finest fraction (less than 180 µm).The material was pre-treated with a 10-12% Potassium hydroxide (KOH) solution in ethanol at 40 °C for 20 minutes, followed by ultrasonic extraction at a solid: solvent ratio of 1:20 (w/v), a temperature of 35-40 °C, and a processing time of 15-20 minutes. The developed and optimized technology of saponification followed by ultrasonic extraction provides a yield of the target product 28-47% higher than when using traditional methods. We observed the effect of particle size distribution on extraction efficiency for the first time. The properties of corn cob powder, along with the carotenoid profile, were investigated to provide a good and diverse use case.
